To build, or not to build?

Im a 24 year old guy who is pionate about motorcycles. however, i also am pretty much a newcomer to its technicalities. i was wanting to buy a motorcycle and kinda grow with it. but then i thought, "maybe i should do a cafe racer project?" (i reckon this way, i get to know it inside and out. i know there are lots to learn, lots of grunt work im willing to do, and im on a tight budget. around $3000 at most.) is this something i should look at or should i just go ahead with a used bike? am i in waaaay over my head? please dont be rude with your answers im being sincere here
