If I am quoting something from an anthology, how do I cite it in the essay?

Do I use the author of the short story, or do I use the author of the book? I am doing an essay and am quoting from different stories. We are using the MLA format. One of the quotes I am using is from Young Goodman Brown. Do I quote it using Hawthorne or do I quote it using Charters (the one who compiled the book we are using)? Thanks
